Hi, Yvonne. No need to adjust the temp, but boneless, skinless thighs and breasts will cook faster. So, you’ll need to keep a closer eye if using those. We recommend using a meat thermometer to test for doneness in this case. Chicken is fully cooked when it reaches an internal temp of 165 degrees F.

We made this for dinner along with the Greek salad and it was amazing! The potatoes melted in your mouth and the chicken was moist and tender. Will definitely be making this again. Even my picky son who does not love lemony things loved it! Just got your cookbook too and can’t wait to try more things.
