I marinated all the ingredients using artichokes instead of the green peppers before assembling the skewers. I felt this gave the ingredients a chance to absorb the dressing. This way my serving tray didn’t get too messy.

The dressing on these was delicious. The lime was an unexpected surprise. It’s a great way to make salad into finger food.

My only problem was the feta kept crumbling and I could not keep it on the skewers. Maybe there is a firmer version than what I bought. But I just decided to go with it and crumbled it on top. Guests loved it.
