I wanted to serve something unique to my friends on Friday evening and this “salad” was a major hit. Doubled the recipe and served it to 8 and not an olive remained. My store was out of burrata and I was out of time so I used a pound of fresh mozzarella. Can’t wait to try it again soon with burrata. I’m certain that will be an even bigger hit.

This salad was so good. I really didn’t know what to expect so I was surprised how tasty it was. It was very easy to make.
