Love this recipe. Keep in mind the dressing is a lot so I double the amount of lentils and all the veggies and there was still a nice amount of dressing at the bottom of the bowl. Perfect amount to soak up with some Italian bread.

I was excited to try this because my garden is full of parsley, mint and cucumbers. Surprisingly bland. Added white wine vinegar to give it a boost. Maybe my lemons weren’t large enough?
