The soup was delightfully flavorful and rich with an excellent balance of savory:lemon:chicken flavors (I used homemade chicken stock). I accompanied it with a Greek style pizza (eggplant, tomatoes, red onion, chicken , feta) for a nicely hearty dinner on a very cool late summer evening

Also, it was easy to make. You need a touch of technique but still easy if you follow the instructions to rinse the rice and temper the sauce. Quick to the table once the broth was done

This is the way my mum always did it. I’ve never heard of putting chicken in from a rotisserie chicken. I think cooking it slowly with the veg is what makes the dish as you get all the flavour and goodness from the bones of the chicken and other parts of the chicken that melt into the sauce
