I used it for gyros, but next time I will divide the dough into less pieces so we can make a pita the size of my pan with more surface area for bigger gyros. Good recipe, I will use it again. Hello! I think it might be possible to freeze the dough, but it’s not something we’ve tested. What we recommend is baking the whole batch, and once cooled, package and freeze what you don’t plan to use. When needed, it can be thaw it out in the fridge overnight and simply warmed up in the oven.
